Fun Collection of Tips and Tricks  

In the South we grow citrus...lots of citrus!  Most homes have a least one citrus tree:  Satsuma, Mandarin, Navel Orange, Louisiana Sweet, Myer Lemon or Grapefruit just to list a few!  By late Fall we are often indundated with fresh fruit which for a couple of months provide a never ending source of juicy sweetness.  The first hard freeze usually arrives in January, and the remaining fruit must be picked or will spoil.  But what to do with all the fruit?  We juice the lemons and the oranges and freeze the tart juice for use throughout the year.  Some of the lemons and oranges are made into marmalade which I call "Sunshine in a Jar"!  Most of the Satsumas and Mandarins slices are preserved with a lite syrup to use for salads.....and the rest of those slices are frozen for a delightful summer treat!!!
